Famous Texas Sausage ~ by Linda

For those that live in Texas, or have visited Austin, you’ve most likely heard of Elgin (pronounced El -ghin) sausage. The town of Elgin is east of Austin. Elgin’s reputation as the “Sausage Capital Texas” began with the railroad. Elgin started as a watering stop for the H&TC railroad in 1872. In German tradition Mr. Moon who owned the Elgin Market ground his beef trimmings, added spices and salt, and stuffed the mixture into a natural casing. Later, Mr. Moon opened the Southside Bar-B-Que place (as you see here) and sold the sausage and hot plates of BBQ and all the fixings. There’s still an on-going debate whether Southside or Meyer’s is the best – Southside’s sausage is generally made from beef, and Meyer’s is mostly made from pork. Regardless of your preference, both sausages played a role in inspiring the Texas Legislature to proclaim Elgin the “Sausage Capital of the Texas.” This is a quick snapshot that I took with my phone (as you can see by my selfie reflected in the window). I know the photo is a bit off kilter, but I was hungry – so it was in my mind to get a quick shot, and go inside to eat. 😊 Yummy barbeque, and we also bought some sausages to take home.
